Judy Segal, 47, has always been a role model to her three daughters. When the girls were little, the single mother worked at a diner, picking her children up from daycare and band practice in between shifts and preparing a nutritious, serviceable dinner before she went to school at night.

“We had to tough it out back then,” Segal said. “But we knew that it wasn’t going to last forever.”
